The Ultimate Gooey Triple Chocolate Oreo Butter Cake.

Do you ever get so overloaded with trying to be healthy that you just want to rebel and eat some Oreos? I'm there. Well actually I was there; this final recipe is the crescendo of the big fat diet rebellion I've been in since the holidays.

But in my defense, I've been immersed in how to be healthy since 2006 when a certain someone almost died from encephalitis. Then shortly after that my little Annie was diagnosed with a brain tumor, so that's six years and dozens
 (literally) of books about natural health and healing and brain function and choking down lots of kale and fish oil

Add to that three articles I saw recently that just took it too far about how your olive oil might not be healthy after all, you might be drinking TOO MUCH water, and Christmas lights have LEAD IN THEM SO YOU SHOULD BUY ORGANIC CHRISTMAS LIGHTS...

... and that's it. That's too far. Too crazy. I'm out. I just want to use white flour and read books normal people read like Twilight and not feel guilty about it for a while, you know what I mean?

And also, I just really love my husband. I mean, like REALLY. And Mr. Wonderful loves chocolate and butter and Oreos {and not so much kale and fish oil}, and I wanted to make him something he'd swoon over because I love him.

Don't worry; I'm returning, grudgingly, to Nourishing Traditions recipes immediately. {But you can forget the organic Christmas lights}.

This recipe has two parts... the crust and the filling. The crust is kinda cookie-ish; the filling is gooey and just downright heavenly.

In a mixing bowl stir together flour, cocoa, baking soda and baking powder, salt and sugar, all of which may or may not have been shown in the above pictures. I can't get bogged down in details like that. 

Add to that mixture one egg and (here's where it starts to get good) one stick of melted butter. 

Your mixture will be kinda crumbly, almost like gravel. Dump that into a 9x13 pan and pat it down into a crust.

And now for the filling. MMMMM. In your mixer bowl beat a block of cream cheese until it's smooth. Add some eggs, then cocoa. Oh, and then a massive amount of powdered sugar and one more stick of butter. Remember that 'diet rebellion' thing I mentioned? Told you. 

Chop up a few Oreos (I used twelve) into coarse chunks. Stir those into your filling along with some chocolate chips if you dare. 

Bake at 350* for about 40 minutes. Then enjoy it because tomorrow? It's back to kale and fish oil, baby, because we're grown ups and we need to act like it.

The Ultimate Gooey Triple Chocolate Oreo Butter Cake
2 cups all purpose flour
3/4 cup + 1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
2 cups sugar
2 sticks butter, separated, melted
3 eggs
1 8-oz package cream cheese, softened
4 cups powdered sugar
1 teaspoon vanilla
12 Oreos, coarsely chopped
1/2 cup chocolate chips

Preheat oven to 350*. Stir together flour, 3/4 cup cocoa, baking soda, baking powder, salt, and sugar. To that mixture add 1 stick of butter, melted, and one egg; mix well. Press mixture into a greased 13x9" pan; set aside.
In another mixing bowl (or, heck, the same one), whip the cream cheese until smooth; add two eggs and mix until well blended. Add powdered sugar SLOWLY unless you want to wear it; also 1/4 cup cocoa and 1 tsp vanilla. Mix well. Stir in chopped cookies and chocolate chips, then pour into your pan over the prepared crust. Bake at 350* for 40 minutes.
