Y’all, I have to be honest… never in a million years would I have believed that a recipe for HEALTHY BROWNIES could ever be delicious.
I mean, I’ve eaten the ‘diet’ brownies in the green box at the grocery store, and NASTY.
And then when I read the ingredients list on these bad boys? I didn’t exactly have high hopes.
But heck, I’ll try anything once, so I made these, and they turned out shockingly, surprisingly… INCREDIBLE. As in, if I had a plate of THESE BROWNIES and a plate of REAL BAKERY BROWNIES, I’d choose these. As in, my kids had NO IDEA THEY WERE MADE OF…

Look, there’s an undercover ‘secret agent’ ingredient in this recipe, and if I tell you what it is you have to promise you won’t yell and scream and fall out on the floor. Just TRUST ME and make these. That’s alls I’m sayin’.
This recipe is inspired by the one found within the pages of Trim Healthy Mama, but I added some, subtracted some, and twisted it a little and adapted it to how *I* like it. Make them. You will NOT be disappointed. ESPECIALLY when you realize you can eat like this and still be all buff and trim and not feel one bit deprived.
UNDERCOVER BROWNIES, Adapted from Trim Healthy Mama
Ingredients
1 15-oz can black beans, drained
2 eggs
2/3 cup egg whites (approximately 4 egg whites)
4 T cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
2 T coconut oil
2 tsp vanilla
1/2 cup cream cheese
1/2 cup xylitol
1/2 dropper liquid stevia (about 10-15 drops)
1 cup coarsely chopped pecans (optional)
Instructions Preheat oven to 350*; grease 8×8 baking pan. Place rinsed/drained black beans into food processor and process until smooth and creamy. Add next 10 ingredients (if your food processor is big enough; I have to transfer processed beans to my mixing bowl) and mix well, scraping down sides of bowl or food processor until everything is incorporated and smooth. Stir in pecans. Spread into prepared pan and bake 30-35 minutes.

Hi,<br />I see your undercover brownies call for xylitol. I try not to keep that in the house due to having a cat. However, I do have THM Sweet Blend. Would I be able to use that in place of the xylitol? If so, how much? Or do you really suggest xylitol. If so I guess I will have to always be extremely careful. Thanks for your help. 🙂 Carolyn
Sweet Blend could definantly be substituted , it typically take only 1/2 of what the recipe is calling for since it is so much sweeter. I won’t have Xylitol in my house due to having an indoor dog…too risky.
