Baby Susie’s Oatmeal Banana Bites.

A quick update on Baby Susie: for those of you missed this post, she had two very scary seizures last week, but praise the Lord,  NO seizures since last Thursday. We’re still waiting for her lab results to come back to rule out a metabolic or genetic disorder. THANK YOU for the continued prayers!

Susie is REALLY into food these days. For a fourteen-pounder who is smaller than 95% of babies her age, she is SERIOUS, violently serious, about food. And I’m not exaggerating when I say that sometimes she eats more than *I do. There’s lots of yelling at the dinner table, is what I’m trying to say. And I’m a little scared of her.

I’ve learned that for Susie it works best to let her feed herself.

I mean, we try to feed her, but girl loves her some food so much that we canNOT shovel it into her mouth fast enough to avoid the strings of insults she hurls at us like a drill sargeant. Oh, don’t let this face fool you…


Plus, she wakes up before the girls do in the mornings, and in the interest of making our morning routine easier, it’s nice to have something she can feed herself so I can get breakfast ready for everyone else.

Something with nutrients and goodness and none of the bad stuff like preservatives and junk.

Enter these Oatmeal Banana Bites. Perfect size, shape, and texture for a little one who’s just learning to feed herself, and Susie LOVES these, sometimes putting away five or six at a single meal. You know, in addition to a pan of lasagna and a cheesecake…

Just kidding. Sort of.  But if you, too, have a hungry, yelling, fourteen-pound drill sargeant to feed, keep everyone happy and make these today. 

Susie’s Oatmeal Banana Bites Recipe
Ingredients
2 cups quick oats
1/4 tsp sea salt (we like Real Salt)
1/4 tsp cinnamon
1 t baking powder (aluminum-free, please!)
2 overripe bananas, mashed
1/2 cup applesauce (I’ve also subbed baby food peaches…)
3 T coconut oil

Directions
Preheat oven to 350*. Pulse oats in your food processor several times until coarsely ground; add remaining ingredients and combine until well mixed, scraping down the sides of your food processor. Drop by the tablespoon (I like to use a Pampered Chef scoop to make them uniform) onto a greased baking sheet. Bake 12 minutes. I store these in the refrigerator to be on the safe side.

    I just made these again, and the batter was runny… bigger bananas than usual, possibly? I'm adding in 1/4 cup flax meal… in case this helps anyone else. 🙂

Periwinkle-ish blue looks great with the yellow house and will look even better when the azaleas are in bloom. Was it all worth it? That’s not important right now. 🤭 Will I do this all again in two years? 2022 had its highs and lows for sure, but scrollin 2022 had its highs and lows for sure, but scrolling through my pics from the last twelve months made me realize how blessed and content I am. Prosperity, love, and peace have been ours in abundance, in spite of the pain of losing my dad. It’s a new trend I’m starting: bare Christmas tree. Lowe’s tag still attached (so quirky and unexpected)! Christmas ornaments still in boxes. Coming soon to an Anthropologie window display near you.

Every year I think, “next year I’ll do better. Next year I’ll have it together.” And then, here we are on the SIXTH Christmas that we’ve been in this house, the sixth Christmas I’ve dragged our chaotic bunch of Christmas mess out of a chaotic garage I still haven’t unpacked from our move six years ago.

Maybe this year is the year I’ll organize it all and put it back neatly so that by Christmas number 7, it will be smooth sailing. People will flock to my social media to see how I’ve pulled everything off SO PERFECTLY. Next year will be my year.

Seems every year there’s less and less bandwidth for all these things. There’s more grief and stress, less money. More demands, less grace.

I put this sign on the wall in my office so I could keep it in front of my eyes: Love. Joy. Peace. And all that. I am SO unlike Jesus most days. So lacking in all of these character qualities. And that’s WITH waking up most mornings and spending my first 30 minutes with God Himself.

How lost would I be without that? Geez. I can’t fathom. I REQUIRE being transformed by renewing my mind every single morning, and even then, responding to people and life with love, joy, peace and patience doesn’t come naturally.

It’s the goal, though.

This weary world needs that from us Believers during this season, more than ever… even more than an Anthropologie-window-display worthy Christmas home tour.
