Buttery Bacon Biscuits.

Well, it was just a matter of time.

What with our love of butter, bacon, and biscuits, there was bound to come a day when we had to combine them all into the ultimate breakfast experience: The Buttery Bacon Biscuit. I can’t take credit for this though; these biscuits were birthed one Saturday morning when I was all slack-jawed and drooling and somewhat comatose from the sleep deprivation that goes along with having a newborn in the house, and The Man came up with these. Oh, he’s more than just a pretty face, and I’m lucky. I stumbled into the breakfast room in a stupor, and there they were. Man. Bacon. Butter. 

Breakfast, already cooked for me. By The Man. Who cooks. Did I mention that I’m lucky?

These biscuits were brilliant and delicious, I tell you. And in honor of Land-O-Lakes sponsoring a little ad content on this post, I decided it was the perfect time to feature some buttery goodness on the blog.

As if I needed a reason to add more butter… 

Buttery Bacon Biscuits

Ingredients

4 slices thick-sliced bacon, cooked crispy (We like Wright’s bacon cooked in the oven at 350* for 25 minutes)*
2 cups all-purpose flour
1 tablespoon sugar
2 1/2 teaspoons baking powder
1 teaspoon freshly-ground black pepper
1/2 teaspoon sea salt
6 tablespoons + 2 tablespoons cold butter, cut up
1/2 cup heavy cream
1 egg

Directions

Preheat oven to 400*. Finely chop your bacon; set aside. Combine all dry ingredients in a large bowl, and using a pastry cutter cut 6 tablespoons butter into flour mixture until mixture resembles coarse crumbs. Stir in bacon. 

In a separate bowl, whisk together cream and egg; add to flour mixture and stir just until moistened.

Turn out dough onto a floured surface. Knead and fold dough until smooth and flatten to about 1/2″ thick. Using a round biscuit cutter cut the dough into circles.

Meanwhile, melt two tablespoons butter in a glass pie plate;  arrange biscuits in the melted butter so that they’re touching each other.

Bake for 10-12 minutes or until golden. Serve warm with additional butter. Honey is great on top of these also (shown). MMMmmmHmmmmm….
