I was scrolling through some pictures, and came across these little beauties from a cooking session a couple of weeks ago.
A cooking session in which there was homemade barbeque sauce and ribs. Oh, it was the PERFECT combination spicy and salty and sweet…
But for dessert? These mashed potatoes.
And I’m not eating carbs right now. Well, 40 calories a day, but seriously. That’s melba toast. So if you don’t mind, I just need to reminisce about the good old days in which there were mashed potatoes…
We started with boiled chunked potatoes and added butter. A stick of butter I think it was, but only because ALL good recipes start with a stick of butter.
Next… the kosher salt. I love the texture of kosher salt. And Greek yogurt to make it creamy, though you could add sour cream if you wanted. Its all about using what you got.
Then, naturally, we had to add some chopped bacon. Because I wouldn’t be me if I didn’t add bacon.
Oh yes. The trifecta: carbs, butter, and bacon. This would be perfect enough in itself, but ~ and I totally stole this idea from Pioneer Woman ~ I added French Fried Onions.

Downright sinful, these mashed potatoes are. I would be willing to indulge, however, if they were set in front of me…sure that the good Lord would forgive me. After all, he did make the cows that produce the cream cheese and the milk, the pig that produced the bacon and the rain/sun that grew the onions and potatoes. Oh, and I add a huge chunk of sour cream and/or cream cheese to go with my butter…bc can you ever really have too much dairy??
