I get a little bored with breakfast.
Oh don’t get me wrong; I LOVE breakfast… for dinner, or on Saturday mornings when the girls and I make pancakes…
I just have a hard time actually cooking breakfast in the mornings, which I know comes as a shock to those of you who know me well what with me being such an efficient, task-oriented morning person and all.
So our breakfast usually consists of Ezekiel toast and organic eggs or steel-cut oatmeal, when I’m trying to be healthy, or…. (boxed cereal) when ‘healthy’ goes out the window.
The beauty of this pancake recipe is that its fast AND YET still mostly healthy, or at least could be adapted to be a little more Nourishing Traditions if you wanted to.
Oatmeal Sour Cream Pancakes
2 cups old fashioned oats
1 tablespoon packed dark or light brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sour cream or plain yogurt (I used plain Greek yogurt this time, but I’ve tried both and its just as tasty either way)
2/3 cup milk
2 large eggs
oil for cooking
Put oats & all other dry ingredients into a food processor and process 1-2 minutes until the oats are finely ground. Add the wet ingredients and press the pulse button a few times until the batter is mixed.
And I assume you know what to do next. 😉
The extras can be frozen and reheated for those of you who have frenzied, frazzled mornings trying to get yourself and two little girls ready and out the door on time. Not that I would know anything about that.
Cinnamon Honey Butter
one stick of butter, softened (though if you want to use a pound of butter as shown in this picture, go ahead… knock yourself out. There is no such thing as ‘too much butter,’ after all.)
3-4 tablespoons of honey
about 1/2 tsp of cinnamon
These measurements aren’t exact; adjust them to your taste. Mix and spread on your warm pancakes.
