Though every great once in a while I cook something really stellar like Bacon-Seared Creole Seasoned Pot Roast on Sundays, our usual habit is to eat lunch at Casa Ole after church.
We usually end up eating near Rosa’s Dance Hall, where a Mexican man peers out of one of the doorways. A Mexican man named ‘Eduardo.’
At least, that’s what we have named him.
Eduardo works at Rosa’s Dance Hall, and if you want to go dance at Rosa’s you can pay Eduardo in pesos, or…. chickens.
We’ve often wondered what exactly Eduardo DOES with all those chickens?
It keeps us quite entertained on Sundays after church, making up stories about Eduardo, Rosa, and those cheekens. We can’t even drive past Casa Ole anymore without my kids shouting out, “There’s Eduardo’s house!”
That Eduardo… for a one-dimensional guy, he’s one exciting vaquero, and I always look forward to our weekly date at Rosa’s.
What a fun mama you are!!! This is one of my favorite aspects of my mothering role..creating fun, imaginary worlds with my children.

Yes, thank you. I am SO creative and fun. I'm so glad I thought of "Eduardo.". Also, Super Michael and the Fairy. But that's another blog post. My kids are lucky to have someone so creative and fun (aka, me) in their lives. 😉
