The Breakfast Dilemma: Mini Breakfast Pizzas.

I have a love/hate relationship with breakfast.

I love breakfast food …for dinner… I just hate to cook it for breakfast. And I want to eat breakfast… I just don’t want to cook it.

Largely because it would involve getting up earlier in the mornings, which is darn near impossible for me, ESPECIALLY now that I’m a single, working mom and have enough to do to get the three of us ready and out the door in the mornings.

The desire of my heart would be to feed my kids steel-cut oats with cinnamon and raw honey and a side of fresh-squeezed organic juice for breakfast… though I do wonder if it would really kill them if I flung them a can of Slim Fast with a straw as we’re flying out the door for them to gulp in the car on the way to school because it would shave fifteen minutes off of our frenzied, chaotic getting-ready routine in the mornings….

We settle for cereal most days…at least its usually healthy cereal, not the junky stuff.

Usually.

I love cereal.

My girls, however, think a Cooked Breakfast is their Love Language. Well, at least that’s how Katie feels; Annie would love nothing more than to eat Deep-Fried Chocolate Frosted Sugar Bombs six meals per day, if there were such a thing.

When Katie’s Christmas list included a sentence asking Santa if mom could please start cooking breakfast in the mornings, I decided that was Guilt Trip enough to start trying. So I try, but I reserve the right to feed them cereal at least two mornings a week.

So this is one of my attempts at an easy, cooked breakfast; nothing fancy (nor healthy :-/), and I wouldn’t feed them this every day, but it made my kids happy, and sometimes that’s enough.

Start with junky canned biscuits, the kind with no nutritional value whatsoever, and plop them on your Pampered Chef Pizza Stone.

Roll them flat with your Pamered Chef Biscuit Roller*. *That may or may not be the real name of this utensil. I’m not a Pampered Chef rep, ok?

Just for fun, let the four-year-old roll out one or two, until she gets bored and runs off to play with your iPhone.

I had some breakfast sausage, already browned and crumbled, leftover from Breakfast Tacos I had cooked the night before, so we topped our biscuits with sausage, scrambled eggs, and grated cheese, and cooked them 10 or 11 minutes (whatever time and temperature it said on the biscuit can).

Voila.


Yummy!

And even better… the extras went in the fridge to heat up the next morning.


I’m all about cooking once and feeding them twice (but only because I can’t, in good conscience, feed them Slim Fast).

And you can run and tell that to Santa Claus.

    I&#39;m cracking up that she told Santa that she wanted hot bfast! :)<br /><br />I&#39;m not much of a hot breakfast maker either…unless it is instant oatmeal, which I AM a fan of. If my kids get anything else hot for breakfast, I&#39;m afraid that it is hubs that dishes it out! :)<br /><br />christiswritingthewaves.blogspot.com

    try homemade donuts and cookies and cakes. better nutritional value than any storebought cereal, especially if you use good organic whole ingredients. my kids think i&#39;m the bomb (as do their friends) because they get to eat oatmeal nobake chocolate cookies for breakfast. 😀 quickbreads are popular for this too. warmed with butter melted on top. cinnamon toast is a big winner around here

    super cute and fun idea! I love pampered chef as well…everything (almost) in my kitchen in from there.

Anyhoo… after some trial and error, @sherwinwilliams Celestial is what I landed on, and I have to say… I like it. Periwinkle-ish blue looks great with the yellow house and will look even better when the azaleas are in bloom. Was it all worth it? That’s not important right now. 🤭 Will I do this all again in two years? 2022 had its highs and lows for sure, but scrollin 2022 had its highs and lows for sure, but scrolling through my pics from the last twelve months made me realize how blessed and content I am. Prosperity, love, and peace have been ours in abundance, in spite of the pain of losing my dad. It’s a new trend I’m starting: bare Christmas tree. Lowe’s tag still attached (so quirky and unexpected)! Christmas ornaments still in boxes. Coming soon to an Anthropologie window display near you.

Every year I think, “next year I’ll do better. Next year I’ll have it together.” And then, here we are on the SIXTH Christmas that we’ve been in this house, the sixth Christmas I’ve dragged our chaotic bunch of Christmas mess out of a chaotic garage I still haven’t unpacked from our move six years ago.

Maybe this year is the year I’ll organize it all and put it back neatly so that by Christmas number 7, it will be smooth sailing. People will flock to my social media to see how I’ve pulled everything off SO PERFECTLY. Next year will be my year.

Seems every year there’s less and less bandwidth for all these things. There’s more grief and stress, less money. More demands, less grace. 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I put this sign on the wall in my office so I could keep it in front of my eyes: Love. Joy. Peace. And all that. I am SO unlike Jesus most days. So lacking in all of these character qualities. And that’s WITH waking up most mornings and spending my first 30 minutes with God Himself.

How lost would I be without that? Geez. I can’t fathom. I REQUIRE being transformed by renewing my mind every single morning, and even then, responding to people and life with love, joy, peace and patience doesn’t come naturally.

It’s the goal, though.

This weary world needs that from us Believers during this season, more than ever… even more than an Anthropologie-window-display worthy Christmas home tour.
