I can’t remember where I first saw jam made from chia seeds, but I didn’t invent this, I hate to admit.
Ever since I started making Trim Healthy Pancakes and Emily’s S Pancakes, I’ve made this jam to put on top. I’m sorry, but I can’t do sugar-free syrup (gag) and eating pancakes topless (or would it be ‘toppingless?’), well, that’s just too bland for me.
There are other options; you can COOK some healthy syrup, but who has time for that? I’m all about ‘quick’ when we’re talking breakfast.

Enter this Chia Seed Jam…. three ingredients, no cooking. And it’s DELICIOUS… like, so delicious I sometimes eat it by the spoonful while I’m waiting for my pancakes to cook. And bonus? Chia seeds are INCREDIBLY healthy (I first wrote about them here).
I buy frozen mixed berries from Sam’s Club because I go through so many of them lately! I put them right into my food processor frozen and let them thaw on the counter. When they’re thawed, add some chia seeds and stevia and pulse all of it a few times. You may need to add a little water; chia seeds absorb many times their weight in water, which is one reason why they’re so nutritious. Pour it in a pint jar and your jam will set up in a few minutes and be ready to top just about anything.
And you know what? MY KIDS LIKE IT. They never have to know it’s healthy.
Mixed Berry Chia Seed Jam.
Ingredients
2 cups frozen mixed berries
2 Tablespoons chia seeds
1 Tablespoon water
1/8-1/4 tsp stevia to taste
Directions
Thaw frozen berries in your food processor. When thawed, add in chia seeds, water, and 1/8 teaspoon stevia; pulse a few times, scraping sides of food processor, and taste for sweetness. Add more stevia if desired. It’s best to add stevia slowly because too much gets bitter quickly! Pour into a pint jar and store in fridge.

I was wondering if you know how long this lasts in the fridge before it goes bad? When strawberries were in season I tried a "healthy" jam and it fermented rather quickly. I'm sure my regular freezer jam lasts forever because of all the sugar. I don't eat jam every day, so it would last awhile for me if I'd make it.
This sounds a lot like my Crock Pot Strawberry Chia Jam…which we LOVE. So good! We love those mixed berries from Sam's..life saving!!! :-)<br />Naked pancakes aren't very yum, are they? Hi Twila! Honestly I have no idea how long this will last because it never lasts long at my house, usually 3-4 days tops? You could always 1/2 the recipe or even 1/4 it, if its just for you… just do a ratio of 1 cup berries to 1 tablespoon chia seeds; 1/2 cup berries to 1/2 T chia, etc. Hope that helps!
hi! maybe someone already asked this question, but I made Bread in a Mug with a few tweaks in my waffle maker like someone suggested. Since those are "S" waffles, can I have this jam with those? Or is this jam an "E" because it has more than just a palm full of berries? Also, I'm confused because chia seeds have equal amounts of fat in carbs in them, or do you not count
